Good eats:

  • We’re having a major harvest of pepperoncini so I threw some pickled pepperoncini into the lamb/squash mixture. I’ve been doing a lot of quick pickles using this recipe from Simple Comfort Food. I add red pepper flakes and pickling spices to the mix, and reduce the sugar by one tablespoon.
  • While fresh local corn is still around, I’ve been trying to find new ways to enjoy it. One hit: elote-style quesadillas from Food 52. I had some farm-fresh sweet red frying peppers so I added them to the mix too. Just make sure you use fresh tortillas. Mine were a bit stale so they split on the fold making it a bit challenging (and messy) to flip them over.

    I enjoy your weekly posts. Thanks for all the effort and information.
    I did make the hummus with squash & beef recipe for friends this weekend as an appetizer and it was a hit! Doubled the spices and purchased hummus and frozen butternut squash, which made it flavorful and fast, too.
