Good eats:
- I love the bold flavors in this ground lamb with spiced summer squash and hummus from Bon Appetit. And, it’s an easy dish to throw together. The Bon Appetit test kitchen team is stellar. I’ve been enjoying their recipes and their podcast.
- We’re having a major harvest of pepperoncini so I threw some pickled pepperoncini into the lamb/squash mixture. I’ve been doing a lot of quick pickles using this recipe from Simple Comfort Food. I add red pepper flakes and pickling spices to the mix, and reduce the sugar by one tablespoon.
- While fresh local corn is still around, I’ve been trying to find new ways to enjoy it. One hit: elote-style quesadillas from Food 52. I had some farm-fresh sweet red frying peppers so I added them to the mix too. Just make sure you use fresh tortillas. Mine were a bit stale so they split on the fold making it a bit challenging (and messy) to flip them over.

I did make the hummus with squash & beef recipe for friends this weekend as an appetizer and it was a hit! Doubled the spices and purchased hummus and frozen butternut squash, which made it flavorful and fast, too.
