Good eats this past week:
- Looking for a quick dinner? Try this chimichurri chicken from the New York Times. If you aren’t a subscriber, use any recipe for chimichurri, slather it on chicken thighs, let them sit a bit and then bake. I used cilantro (in addition to parsley) instead of the recipe’s oregano. If you use this recipe, cut back on the olive oil, try 6 tablespoons.
- In my quest to use zucchini in a recipe that would last a few meals, I made this zucchini mac and cheese with garlic brown butter breadcrumbs. I didn’t read the post but I think the blogger at Spices in My DNA was trying to hide the zucchini in the mac so her kids would eat it. No such issues here so I chopped the zucchini instead of grating it. I also added red onion and shishito peppers. You could definitely cut back on the cheese—that was a big pile of cheddar, gouda and fontina.
- I’ve made this deviled bluefish from Saveur several times, maybe you’re tired of me talking about it.
- Lately, I’ve turned to a simple sauce for fish, potatoes and green beans: melted butter infused with chopped chives (or garlic chives) and lemon juice. Quick and satisfying. Might do it again tonight with some speckled trout, but thinking about adding Aleppo pepper for some zing.
