Good eats:

  • With temperatures in the 90s, I’m craving southeast Asian flavors. I found an easy fish recipe in Quick & Easy Thai by Nancie McDermott: snapper choo-chee (I used striped mullet) with coconut milk, red curry paste, fish sauce, soy sauce, green onions, cilantro, yum. I served it with sweet and spicy Szechuan green beans and leftover roasted potatoes that soaked up the sauce.
  • Friday nights are all about one-pan meals like this taco pasta—I added kale to my version. Yes, only one pan, the pasta cooks in the same pan alongside everything else.
  • I used the extra chorizo from that recipe to make breakfast tacos on Sunday morning, adding sautéed onion to the chorizo/potato mixture. These ended up being knife-and-fork tacos since we stuffed them too full to pick up.
  • Later on Sunday, I made my first banh mi ever thanks to The Banh Mi Handbook by Andrea Nguyen. I marinated chicken thighs with garlic, black pepper, sugar, Maggi seasoning, dark soy sauce and oil. We topped our sandwiches with cucumbers, jalapeno, cilantro, Maggi seasoning, mayo for me, butter for Jim, and pickled carrot and daikon. I’m looking forward to working my way through that cookbook.
